Falafel...what this world is coming to...

Chickpeas are garbanzo beans

in case you didn't know,

chock full of the best protein

to keep you on the go.


Tahini paste is trickier,

it isn't all that common,

you won't find it in Albertsons

like you would Top Ramen.


I suggest a health food store

to find this special treat,

it's kitty-corner bulgur grain

another thing you'll need.


And yes, so many stops in store

strikes me, too, as awful

--but if you skip

these shopping trips

you'll miss these great falafels.

Ingredients

  • 2 (15 oz) cans garbanzo beans, heated & drained
  • 1 cup plain yoghurt
  • ½ cup bulgur
  • 1 TBSP. tahini paste
  • 1 TBSP. lime juice
  • 1 TBSP. cumin
  • 1 tsp. black pepper
  • 4-5 cloves garlic, minced
  • ½ cup scallions, chopped
  • Handful cilantro, stemmed & chopped
  • 4 flatbreads
  • ½ cup water
  • 1 tsp. baking powder

How to Do It:

  1. Let's make the dressing first. Spoon yoghurt into mixing bowl.
  2. Add lime juice, and stir.
  3. Tahini paste will separate when stored, so be sure to mix well before adding a dollop to the yoghurt mixture.
  4. Stir well, and refrigerate for now. Prep and dice the veggies: garlic, scallions & cilantro, and set aside for now.
  5. Boil water for the bulgur, and once boiling, add the grains.
  6. Cover, reducing heat. Cook until fork tender, about 10-15 minutes. Once cooked, blot gently with paper towel to remove excess moisture.
  7. Time to cook the chick peas. These beans have a fiber in them that breaks down when heated, so be sure to include this step. Once heated, drain the liquid.
  8. Time to make the falafel patties. Grab your Cuisinart, and assemble your ingredients to be processed as follows: garbanzo beans, scallions, cilantro, water, cumin, pepper, baking soda, and garlic. Add incrementally, blending to a smooth paste.
  9. Transfer to mixing bowl.
  10. Mix in the bulgur, blending well.
  11. Using a ¼ cup measure, drop patties into a sizzling pan over medium-high heat. The mixture will be wet, not doughy. Cook the patties 2-3 minutes each side, or until lightly browned.
  12. While the patties cook, assemble a mise en place for sandwich prep. This includes the dressing, the flatbread, tomatoes and sprouts.
  13. Coat bread evenly with a generous dollop of dressing, and arrange 2 patties on one side.
  14. Top with tomatoes and sprouts, fold over, and there it is there. An easy, peasy plate that's palate pleasing, too. :)
