Favorite Ground Beef Recipes
Ground meat can be a good beginning for a nutritious and inexpensive meal. Personally, I haven't eaten beef in years, I always substitute ground turkey. It is is cheaper, has less fat and I really don't notice any taste difference.
For all these recipes you can substitute ground turkey or any other ground meat, but turkey is the most inexpensive choice. None of the recipes call for exotic or expensive ingredients, just the basics. I hope you enjoy them.
Cheeseburger Pie
INGREDIENTS
I CUP + 2 TABLESPOONS BAKING MIX, SUCH AS BISQUIK
1/4 CUP COLD WATER
1 POUND GROUND BEEF OR TURKEY
1/2 CUP CHOPPED ONION
1/2 TEASPOON SALT
1/4 TEASPOON PEPPER
1 TABLESPOON WORCHESTERSHIRE SUACE
2 EGGS
1 CUP SMALL CURD COTTAGE CHEESE
2 MEDIUM TOMATOES, SLICED
1 CUP SHREDDED CHEDDAR CHEESE (4 OUNCES)
DIRECTIONS
Preheat oven to 375 degrees.
Mix 1 cup of baking mix and the water until soft dough forms, beat vigorously about 20 strokes. Gently smooth into a ball on floured surface. Knead 5 times then roll the dough 2 inches larger than inverted 9 inch pie pan.Ease the dough into the pie plate and flute edges.
Cook ground beef and onion until beef is brown, drain. Stir in spices, Worcestershire sauce and 2 tablespoons baking mix. Spoon into pie crust. Mix eggs and cottage cheese, pour over beef in pie crust.
Arrange tomato slices into circle on top of pie, sprinkle with cheddar cheese.
Bake until set, about 30 minutes.
Makes 6 to 8 servings.
Quick Spaghetti and Meatballs
INGREDIENTS
2 BEATEN EGGS
12 OUNCE CAN TOMATO PASTE
1/4 CUP MINCED ONION
1/4 GRATED PARMESEAN CHEES
2 TABLESPOONS MINCED PARSLEY
1 CLOVE GARLIC, MINCED
2 TEASPOONS SALT
1 POUND GROUND BEEF OR TURKEY
3/4 CUP SOFT BREAD CRUMBS
3 TABLESPOONS OIL
2 1/2 CUPS HOT WATER
1 1/2 TEASPOONS SUGAR
1 TEASPOON BASIL
1 TEASPOON OREGANO
1/4 TEASPOON PEPPER
1 POUND SPAGHETTI, COOKED AND DRAINED
DIRECTIONS
Mix together eggs, 1 tablespoon tomato paste, onion, cheese,parsley,garlic and 1 teaspoon salt. Add beef and bread crumbs and mix. Form into 20 meat balls about 1 inch in diameter.
Brown the meatballs in the hot oil, then drain. Mix rest of tomato paste with the hot water and remaining ingredients, except spaghetti. After mixed, pour over meatballs in pan. Cover and simmer for 10 minutes.
Uncover, simmer 10 minutes longer. While the meatballs are cooking , prepared the spaghetti and drain. Keep warm until meatballs and sauce are ready. Serve over hot spaghetti.
Makes 6 servings.;
Tator Top Beef Casserole
INGREDIENTS
1 POUND GROUND BEEF OR TURKEY
3/4 CUP CHOPPED ONIONS
1/2 CUP CHOPPED CELERY
1 CAN CONDENSED CREAM OF MUSHROOM SOUP
1 CAN CONDENSED CREAM OF CHICKEN SOUP
1/8 TEASPOON GARLIC POWDER
1/8 TEASPOON PEPPER
1 CUP FROZEN GREEN BEANS, THAWED
16 OUNCE PACKAGE FROZEN TATER TOTS
DIRECTIONS
Preheat oven to 375 degrees
In large saucepan, brown ground meat, onion and celery until beef is cooked through. Drain.
Stir in soup mixes, garlic powder, pepper and green beans. Spoon into ungreased 2 quart baking dish. Top with tater tots;
Bake for 40 to 50 minutes or until casserole is bubbly and potatoes are golden brown.
Makes 6 servings
Stuffed Peppers
INGREDIENTS
6 LARGE RED, GREEN OR YELLOW PEPPERS
1 POUND GROUND BEEF OR TURKEY
2 TABLESPOONS CHOPPED ONION
1 CUP COOKED RICE
1 TEASPOON SALT
1/8 TEASPOON GARLIC SALT
15 OUNCE CAN TOMATO SAUCE
3/4 CUP SHREDDED MOZZARELLA
DIRECTIONS
Preheat oven to 350 degrees.
Cut off top of each pepper, remove seeds and membranes, rinse peppers then cook in enough boiling water to cover them. Boil for 5 minutes, remove and drain.
Cook ground meat and onion in skillet until beef is browned. Drain. Stir in cooked rice, salt, garlic salt and 1 cup of the tomato sauce, heat through.
Stuff each pepper with beef mix. Stand the peppers in an ungreased square 8 inch baking dish. Pour remaining sauce over meat mixture in each pepper.
Cover dish and bake for 45 minutes, uncover and bake 15 more minutes. Sprinkle with cheese and serve.

Classic Sloppy Joes
INGREDIENTS
1 POUND GROUND BEEF OR TURKEY
1/2 CUP CHOPPED ONION
1/3 CUP CHOPPED CELERY
1/3 CUP CHOPPED GREEN PEPPER
1/3 CUP CATSUP
1/4 CUP WATER
1 TABLESPOON WORCESTERSHIRE SAUCE
1 TEASPOON SALT
1/8 TEASPOON RED PEPPER SAUCE (OPTIONAL)
DIRECTIONS
Mix meat and onion in skillet and cook until meat is browned, then drain.
Stir in rest of ingredients, cook over low heat about 10 to 15 minutes, until vegetables are tender.
Serve in toasted hamburger buns.
Makes 6 servings
Classic Meat Loaf
INGREDIENTS
1 1/2 POUNDS GROUND BEEF OR TURKEY
3/4 CUP QUICK COOK OATS
1 EGG
1 CUP MILK
1/4 CUP ONION
1 TABLESPOON WORCESTERSHIRE SAUCE
1 1/2 TEASPOONS SALT
1/2 TEASPOON DRY MUSTARD
1/4 TEASPOON PEPPER
1/8 TEASPOON GARLIC POWDER
1 SMALL GREEN PEPPER ,CHOPPED
1 MEDIUM CARROT, COARSELY SHREDDED
4 OUNCE CAN MUSHROOM PIECES AND STEMS
DIRECTIONS
Preheat oven to 350 degrees.
Mix together all ingredients. Shape into a loaf in a 9 inch loaf pan. Bake uncovered until done, about 60 to 75 minutes.
6 servings.
