Spinach roll-ups

Serves: 8 servings.


  • 10oz pack of chopped spinach
  • 1 egg
  • 15oz of ricotta cheese
  • 1 pack of Mozzarella cheese
  • 1 pack of pepper jack cheese or a cheese that’s you desire for the top of the roll-up’s
  • Oregano
  • Red pepper flakes
  • Pepper
  • Garlic powder
  • Italian seasonings
  • 1 box of lasagna noodles ( You’ll only need 8 to 10 noodles)
  • 1 glass of pasta sauce.


Cook your pasta until it is firm or a little under cooked.This is to make sure your pasta doesn’t over cook in the oven

Squeeze out all the water from your spinach. Place it to the side.

Shred your cheese if you need to.

In a medium bowl, place your ricotta cheese, squeezed out spinach, 1 egg, mozzarella cheese but leave 1/2 cup of the mozzarella cheese for the top of your roll-up’s, add your seasonings to how much you like.

Mix your ingredients together until everything is combined.

After your pasta is finished cooking drain it at run cold water over it. After your pasta is cooled pat your pasta dry so that no water is on it.

Pre-heat your oven to 350 degrees

In a baking dish or metal pan pour some pasta sauce at the bottom.

Spread some of the spinach cheese filling evenly along the length of the cooled and dried noodles. Roll the noodles to the opposite end.

Place the filled noodles in the pan.

Mix your remaining mozzarella cheese and pepper jack cheese or which cheese you chose to use together.

Pour some pasta sauce on top of your roll-up’s.

Pour your cheese blend on top of your roll-up’s. Top it off with some oregano.

Place some aluminum foil on top of your pan. Bake for 25 minutes or until cooked through.

Serve hot and enjoy!!!!
