Best Banana Bread Ever and High Protein too.
One of my favorite things in the world is hot, moist homemade banana bread with cream cheese. It seems that no matter how many we eat there are always 2 to 3 bananas that become overripe. It you don't have time to make your bread right away just toss your ripe bananas in the freezer until reeky to use. How easy it that.
My family loves soft cream cheese on their banana bread which adds even more protein to the bread. It makes a great breakfast, dessert or even afternoon snack. You can even add just about any fruit or nut you like to enhance the flavor. One of my friends like chocolate chips in hers!!!
HOW TO MAKE EASY HEALTHY BANANA BREAD
-1 cup unbleached baking flour
-3/4 cup whole wheat flour
-1/4 cup wheat germ or ground flax seed optional
-1tsp baking soda or 2 tsp baking powder
- 1/4 tsp salt
-1/2 tsp. vanilla extract
- 2 eggs
-4 smash ripe bananas or 11/2 cups
Another tasty thing to do is mix 1/2 brown sugar with the regular sugar to give bread a more homey taste
If you want to save time use one bowl and mix all wet ingredients first. Whisk eggs first . Add other wet ingredients. Next mix in sugar. Now you need to add flours and wheat germ and spices. Some people like a little cinnamon in their banana bread. Mix all together and add walnuts or pecans if desired.
Blueberries are another nice addition.
Prepare 1 or 2 loaf pans with shortening or spray on baking spray. Pour mixture into loaf pans and bake at 325 -350 for 1 to 1 hr- 25 minutes. You want a knife to come out clean . Remember not to let your bread get overdone. The heat will keep it cooking for a few minutes. Serve hot or cool .
I like to make up a mix up some cream cheese with cinnamon sugar and vanilla. It is awesome on banana bread.
There are some easy tips which I recently learned. I am forever having banana's getting too ripe and producing fruit flies, especially in the summer months. Now I peel the banana's that are too ripe to enjoy and put them in a tupperware container or ziplock bag. I put it in the freezer and the next time I want to make banana bread I pull it out of the freezer and am ready to go.
One day my husband picked up some self rising flour by mistake. I just deleted the salt and baking soda and my bread did great. It is a little saltier so I do prefer regular bread, whole wheat or plain flour. I wonder how it would taste with graham flour?
I have a baking pan with four separate small bread trays. I like to use these to make for friends and neighbors. You can also wrap these up well in plastic wrap and freeze for several months.
