Frosty Mountain Lemon Curd and Double Cream Cake
This is a really simple cake recipe. I've called it frosty mountain, because when the frosting is sprinkled on top it looked like a snow covered mountain.
You will need:
8oz of self raising flour
2 eggs
4 oz of margarine
4 oz Sugar
Lemon curd
1/2 Tub of Double Cream
Icing sugar to sieve over the top
Method:
Preheat the oven gas mark 5
Put the butter and sugar into a bowl and cream them together. Next measure out 8oz of self raising flour and sieve half of it into the bowl. Next beat two eggs into another small bowl and put 2 tablespoons of milk into the beatedn eggs. Put half of the egg mixture into the bowl with the butter and sugar and flour mixture. Mix all these together, then sift the other half of flour and remaining egg mixture into the bowl. Grease a cake tin and pour the mixture in. Finally place tin on middle shelf on the oven for approx 45mins gas mark 5. When it has finished baking take it out of the oven and leave to cool. Then when cool, slice the cake into two halves and spread the bottom half with lemon curd, then whisk the double cream and pour on top of the lemon curd. Then put the two halves of cake back together and sieve icing sugar over the top.
