Fruity Chicken Salad

Fruity Chicken Salad

This chicken salad combine freshly cooked chicken breasts with vegetables and fruit for a chunky and filling salad that can be served so many ways. It is an excellent salad to use for parties or showers served with crackers or in scooped out baby tomatoes. It is also good as a meal served in a medium sized scooped out tomato (tomato cup) or bell pepper, or simply on a bed of lettuce or as a sandwich filler.

Cook Time

Prep time: 30 min
Ready in: 30 min
Yields: Several Servings

Ingredients

  • 3-4 chicken breasts, skinless & boneless, shredded or diced
  • 3/4 cup celery, diced small
  • 3 tbsp lemon juice
  • 1 cups seedless grapes
  • 1 1/4 cups salad dressing or mayonnaise
  • 1 cup sweet onion, diced finely
  • 2 1/2 cups apples, leave peel, diced small
  • 1/2 cup walnuts, chopped (could use pecans)
  • 1 tbsp seasoning salt
  • to taste salt and pepper

Directions

  1. Boil chicken in water with seasoning salt. Cook until no longer pink in the middle. Remove from heat, drain, and let chicken cool. Shred or dice. (I like shredded meat.)
  2. Chop up celery, onions, and apples. Cut grapes in half.
  3. Put chicken, vegetables, and fruit in a large mixing bowl. Add the salad dressing and the nuts and lemon juice to the bowl. Add salt and pepper to taste. Chill. Serve on a bed of lettuce, a tomato cup, or in a sandwich. So delicious.

      Hi beccacooling,

This hub is making me hungry and I will come back and copy this recipe down and read some more. Great job in presentation and it is always so important to me to serve delicious food that looks inviting.

My grandmother taught me to cook Southern Style---so I have many recipes, but I enjoy writing poems, short stories and article in lieu of writing recipes.

So I will be looking for yours in the future.

      Thanks for sharing this recipe.

      Your Hub Friend,

      Bobbi Purvis

Chicken salad on croissants! Those would go really fast at any church social or party. They look delicious. I love the addition of the chopped apple to give the chicken salad a sweet flavor. Thanks to Eyes for sending me this way. Yummy recipe.

I am surprised others haven't seen this yet. I am sharing it in my "Recipes of the Lost Ark" hub in which I mention recipes my daughter and I will make this weekend because we are curious how they went unnoticed. I hope it will bring you some traffic. This looks yummy to me. Perhaps you should put the picture of the chicken salad on the sandwiches as the first picture so that shows up in results? Would that help to bring people in?
