Fall Is Here!!

Fall is always the dreaded season. With the shortening of days and the cooling breeze at night, also comes the greatness of the fall vegetables! Potatoes, turnip, carrots, squash etc. There's nothing like coming home to the wonderful aromas of your favorite comfort foods baking in the oven or simmering on the stove! Cinnamon and spice, chicken and rice! Your family will love coming home to these great Fall recipes!

Ingredients

  • 2 Cups All Purpose Flour
  • 1/2 Cup White Sugar
  • 1/2 Cup Apple Sauce
  • 1/3 Cup Vanilla Yogurt
  • 1/2 Cup Raisins
  • 1/2 Cup Canned Pumpkin
  • 3 Tsp Baking Powder
  • 1/2 Tsp Cinnamon
  • 1/2 Tsp Ground Cloves
  • 1/2 Tsp Nutmeg
  • 1/2 Tsp Salt
  • 1/2 Cup Brown Sugar, (For Topping)
  1. Pre heat oven to 400F. In a large mixing bowl combine flour, white sugar, raisins, baking powder, salt & spices. Mix well.
  2. In a medium sized mixing bowl, add yogurt, pumpkin, and apple sauce. Mix well with a hand mixer.
  3. Add wet ingredients to dry mixture, stir just until ingredients are moistened.
  4. Fill your muffin cups 3/4 full, sprinkle the tops of each with a generous amount of brown sugar.
  5. Bake on middle rack for 25-30 minutes. let cool.

Pumpkin Spiced Cookies

Ingredients

2 cups canned pumpkin
1 1/2 cups brown sugar
1/2 cups margarine
2 eggs
2 3/4 cups flour
1 tablespoon baking powder
1 tablespoon cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 teaspoon ginger


Directions

1) in a small mixing bowl combine dry ingredients, set aside
2) Combine pumpkin, margarine, eggs & brown sugar in a large mixing bowl.
3) Add dry ingredients, mix well
4) Bake at 325F for 12-15, Until golden brown, but still soft in the center!

      I have two sugar pie pumpkins sitting on my counter top waiting for me to roast and puree them. Definitely looking forward to those cookies!
