Ingredients
- 2 Cups All Purpose Flour
- 1/2 Cup White Sugar
- 1/2 Cup Apple Sauce
- 1/3 Cup Vanilla Yogurt
- 1/2 Cup Raisins
- 1/2 Cup Canned Pumpkin
- 3 Tsp Baking Powder
- 1/2 Tsp Cinnamon
- 1/2 Tsp Ground Cloves
- 1/2 Tsp Nutmeg
- 1/2 Tsp Salt
- 1/2 Cup Brown Sugar, (For Topping)
- Pre heat oven to 400F. In a large mixing bowl combine flour, white sugar, raisins, baking powder, salt & spices. Mix well.
- In a medium sized mixing bowl, add yogurt, pumpkin, and apple sauce. Mix well with a hand mixer.
- Add wet ingredients to dry mixture, stir just until ingredients are moistened.
- Fill your muffin cups 3/4 full, sprinkle the tops of each with a generous amount of brown sugar.
- Bake on middle rack for 25-30 minutes. let cool.
Pumpkin Spiced Cookies
Pumpkin Spiced Cookies
Ingredients
2 cups canned pumpkin
1 1/2 cups brown sugar
1/2 cups margarine
2 eggs
2 3/4 cups flour
1 tablespoon baking powder
1 tablespoon cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 teaspoon ginger
Directions
1) in a small mixing bowl combine dry ingredients, set aside
2) Combine pumpkin, margarine, eggs & brown sugar in a large mixing bowl.
3) Add dry ingredients, mix well
4) Bake at 325F for 12-15, Until golden brown, but still soft in the center!
