Gluten Free Special Pumpkin Bread

Simple and Easy
Being someone who is always busy and striving to uncover recipes that my family loves, I demand simple and easy, while also meeting all the demands of our diet restrictions. This bread is one that fulfills the requirements and even exceeds them! While it is rare to have any leftovers, I do know on the rare occasions that it has happened, I can wrap it tightly in aluminum foil and it remains just as moist and delicious as when I pulled it out of the oven! This is something that is very rare when considering gluten-free.
Not only this, but it is so delicious that many claim it could even be a dessert. I know some family members have even heated it slightly in the microwave and then coated it with dairy free homemade ice cream and said it was absolutely amazing! I even have people who have offered various things for me to just make the bread for them. Scary really. Its why I have decided to share it on here for others to enjoy! And when you prepare it for a gathering, don't mention it is gluten free until after everyone begins to ask! The look on their faces is always priceless!

Can Tell How Wonderful and Moist it is!
When dealing with gluten-free bread, one of the greatest challenges we face is creating a moist bread, and this challenge was one that has always bothered me. I have tried everything and while I have made some wonderful bread, I never found the satisfaction that this amazing recipe has provided me. The first bite was absolute heaven and then, by completion, I knew I finally had a winner for a moist and decadent bread!
Then when others began tasting and arguing that it could not be gluten-free, any doubt or concern had completed disappeared. Not only is it flavorful, but it comes out moist and if stored properly (wrapped tightly so no air can get in) it is also one of the only gluten-free bread recipes I have ever created that was just as moist the next day as it was when it came out of the oven!
Not only this, but Thanksgiving can be one of the most difficult times of the year when abiding by gluten-free and dairy-free. This recipe makes it a lot easier! I almost bet you cannot stop with just one bite! The "secret ingredient" allows the moist texture to lock-in and remain! I will admit I have done very little to change this recipe, other than making it gluten-free and because of that, think it is only fair to share this amazing gem with others who may be facing the same challenges! I promise you will not regret trying this out!
Not only is it absolutely delicious, but it also is simple to make! Everyone is sure to beg for more! I have even had family and friends who claim they despise pumpkin bread to rave over this simple recipe. Having said that, have to ask, what are you waiting for? Time to get baking!
You Can Just See the Moisture!
How Long Before Its Ready?
Ingredients
- 1 1/4 c. Extra Virgin Olive Oil, (Coconut Oil is amazing as well!)
- 5 eggs, beaten
- 2 c. pumpkin puree, (I prefer Libby's)
- 1 c. organic brown sugar
- 1 c. raw cane sugar
- 2 (3.5 oz) instant coconut pudding, (this is a necessary)
- 1 tsp. gluten-free baking soda
- 2 c. gluten-free all-purpose flour
- 1 tsp. kosher salt
- 1 tsp. ground cinnamon
- 1/2 tsp. guar gum
- 1/2 tsp. xanthum gum
Directions
- Preheat oven to 350 degrees.
- In large bowl, combine oil, pumpkin puree, eggs, sugar, pudding mixes (dry, do not prepare), cinnamon, and salt.
- Once well combine, add in flour, baking soda, xantham gum, and guar gum until just combined.
- Split the batter into 2 9x5 loaf pans that are greased (and floured if you have problems with sticking). NOTE: I use silicone loaf pans and they require only a light dab of cooking spray!
- Bake for one hour, or until a "tester" inserted in the center comes out clean.

Final Note
As you will see, I do not include nuts in this recipe, this is because I am addressing family allergy; however, I will provide the option for adding nuts.
- 1 c. chopped walnuts
If you add this, you will need to fold these in when you are folding in the flour and gums. I have tried the recipe with the walnuts and it was just as divine with and without them. I actually do not miss them when I prepare for my family and that is unusual in a bread as well! I really hope everyone enjoys this as much as our family!
