Grandma's Lemon Drizzle Cake
Easy to Make and Always Popular
When I was younger my Grandma always use to make this cake for us. It became part of what seeing our Grandma was about and it was absolutely delicious. Anything lemon flavoured is a bit risky especially for children of a young age yet this specific recipe is sure to delight anyone and everyone.

Ingredients
- 4 Ounces Margerine
- 6 Ounces Self-Raising Flour
- 1 Tsp Baking Powder
- 2 Eggs
- 6 Ounces Caster Sugar
- 4 Table Spoons Milk
- 1-2 Lemons
- Lemon Curd
- A little extra caster sugar

- 2 11b Loaf Tins
- Baking Parchement or Loaf Tin Liners
- Food processor/Electric Mixer
Method
- Pre-Heat Oven to 180°C and finely grate the lemon(s)
- Place the Margarine, Measured Caster Sugar and Eggs into a food processor and blend or into a large bowl and mix with an electric mixer until of a blended consistency.
- Add the Self-Raising Flour, Baking Powder and the grated zest of the lemon(s) and mix. The mixture should be of a "dropping" consistency i.e. it should slowly drop in dollops from a spoon without being too runny. If the mixture is too stiff then add milk.
- Spoon the mixture evenly into the loaf tins and bake in the oven at 180°C for 30-35 minutes. If you take it out and hear/see it crackling then place it back into the oven for another 3 minutes
- Mix some caster sugar with some juice from the lemon. Add a little of each at a time until you have the mixture at a gel like consistency.
- After removing the loaves from the oven us a fine metal skewer or something similar to poke several holes in the top of one loaf. Then pour the mixture of caster sugar and lemon juice very slowl over the top of the cake where you have poked the holes.
- Let the loaves cool a little before turning them onto a wire rack to allow them to cool further.
- When the loaves are cool and the drizzle set, take the bottom half (the one you DID NOT pour the drizzle over) and slice its top off horizontely to give yourself a flat surface. Spread the lemon curd on this area of the cake to the degree that you wish. Finally sandwich the two loaves together and the cake is complete.
