Ingredients
- 1 16 - 20 oz can sliced or crushed pineapple
- 1 cup light brown sugar, firmly packed
- 1/3 cup butter, or margarine
- Maraschino Cherrys, cut in half
- 1 box pineapple upsidedown cakc mix, or white/yellow cake
- 1 envelope whipped topping mix
- 4 eggs
- cold water
- preheat oven to 350
- drain pineapple, reserving juice
- combine brown sugar and butter in 9x13 pan
- arrange pineapple slices in pan, cutting slices if necessary.
Place cherry in center of each slice
- sprinkle with 2 Tablespoons of pineapple juice
- Combine cake mix, whipped toping, eggs & water added to pineapple juice to equal 1 cup in a large mixing bowl. Blend, then beat at med. speed for 4 minutes
- Pour evenly over pineapple
- Bake for 50 -55 minutes (40 - 45 minutes for glass pan)
- Cake is done when top springs back when lightly pressed or toothpick inserted into center comes out clean
- Invert to a serving plate and remove pan
