Great Pancake Batter Recipe
Pancakes I am going to eat after I publish this hub.
This pancake recipe has been in my family for a long time. Passed down for generations
it's a hit with anyone who tries it.
My mom used to have a cafe at the beach, a lot of tourists from all over the world ate at her place. She sold light meals and all kinds of desserts like chocolate cake, cheese cake, all kinds of ice creams and pancakes.
The pancakes were the most popular item on her menu .
I made some for a friend seven years ago,before she moved to England.
I rarely talk to her now due to her crazy work schedule, but when we do get in touch
She almost always mentions the pancakes and how much she misses them. he!he!
I love pancakes and I have tried them in many pancake houses and
restaurants all across the country.
So far I have not come across a better tasting recipe.
Now I'm not saying all the recipes that have been passed down in my family are the best , but this one is a keeper.
It's really easy and quick to make.
It's a pancake people will remember :)
You can have them anytime, for breakfast, dessert, as a snack or when your friends come over for coffee.

Here are the ingredients:
1. 4 mid sized eggs
2. 1 litre
3.470g plain all purpose flour
4.1 tsp vanilla essence
5. A good pinch of salt
6. Some oil for frying
Method:
1. Pour milk in a large bowl , add eggs and whisk well
2. Add vanilla essence a pinch of salt and whisk that in
3. slowly add the flour little by little while whisking , this does not take long. You just
Want to make sure that there are no lumps of flour, the dough needs to be nice and smooth, not too thick. If the dough is very thick the pancakes will end up too tough. You want them nice,light and fluffy.
You can't go wrong if you follow this recipe.
4. Heat a frying pan on the stove add a tbsp of oil, add one ladle of batter to the oil.
Fry until light brown on both sides.
Serve with maple syrup,honey,jam or my favorite Nutella :)
If you want to make them fancy or for special occasions, put some berries on the pancake, drizzle some honey on them and you have just made them a classy dessert, and if you want to go crazy,
top it all up with whip cream yum...yum
Another great topping idea that was popular at my mothers cafe, is to fill pancakes with sliced banana and top it off with chocolate sauce or melted chocolate.
Pancakes are so versatile anything goes, just use your imagination.
In Malaysia,where we used to live, they have their own unique filling for pancakes.
They grind roasted peanuts and mix in some brown sugar. Tasted pretty good.
They also fill pancakes with creamed sweet corn and sugar or sweetened condensed milk.
If you are adventurous you can try these interesting toppings.
