Green Chile Cheeseburgers
Did you know that even McDonald's has Green Chile Cheeseburgers on the menu here in New Mexico? No other Southwestern state has them. These are special to only New Mexico.
New Mexico is known far and wide for our wonderful Hatch Chilis. They have a unique flavor and are highly prized by people in New Mexico.
When I took some frozen green chiles (mild) back to the family in the Midwest, I found out that they had no idea how MUCH to put on the burger. The grill-master thought one teeny tiny piece was enough...as in two fingers size. NOT!
You need a slab or palm sized slice of prepared green chile!
Once your burger is done and the cheese all melted, COVER the burger with the green chile. The size of the green chile should neatly fit in the palm of your hand. It should be a prepared chile. This means roasted and then either fresh, canned, or frozen/thawed. Please have the chile at room temperature as the grill and heat of the done burger will warm it up enough. Although you can warm it in a pan first. I have never had raw chile on a burger and it doesn't sound appealing.
While I like cheddar cheese on mine, many zip it up even more with Pepper Jack. Heck, throw on a generous portion of avocado too, yum!
