Green Chile Stew Pot (Caldillo)
Caldillo / Green Chile Stew Pot
Serve this spicy stew with peeled orange slices sprinkled with cinnamon-sugar. Bottled cinnamon-sugar can be found on the spice aisle of your local supermarket. Bread for dipping fans.
Ingredients
- 2 pounds (910 g) Round steak, Cubed
- 3 tablespoons Canola oil
- 2 Onions, Chopped
- 2 Potatoes, Peeled, diced
- 2 cloves Garlic, Minced
- 6-8 Fresh Green chilies, roasted, Peeled, seeded, diced
Instructions
- Sprinkle round steak with 1 tablespoon ( 15 ml) salt; heat oil in large Skillet and brown meat. Put onions, potatoes and garlic in same Skillet and cook until onions are translucent.
- Pour all ingredients from Skillet into large Stew pot. Add chillies, 1 teaspoon (5 ml) salt and 1/2 teaspoon (2 ml) pepper and enough water to cover.
- Bring to boil, lower heat and simmer be or 1 to 2 hours or until meat and potatoes are tender.
