Coffee Ice Cream

Yields: Serves 4 people
  • 1 1/2 cups Milk
  • 1 Egg yolk
  • 8 tbsp Sugar
  • 1 1/2 cups Thick cream
  • 4 tbsp Coffee powder
  • 1 tsp Vanilla essence
  1. Heat the milk and keep aside.
  2. Beat the egg yolk and sugar in a bowl until light. Continue beating and add hot milk.
  3. Transfer this mixture to a heavy sauce pan and cook over a medium heat, stirring constantly.
  4. Cook until the custard is thick and coat the back of the spoon. Do not allow the mixture to boil or else it will curdle.
  5. Add cream, coffee powder and essence into it.
  6. Remove from heat and strain the mixture through a sieve.
  7. Allow it cool to the room temperature.
  8. Pour the mixture into the ice cream bowl and freeze it over night or until sets.

Ingredients

  1. Milk - 1½ litre
  2. Corn flour - 2 tbsp
  3. Sugar - 2 cups
  4. Gelatine melted with 3 tbsp of water - 1 tsp
  5. Fresh cream - 200 gms
  6. Cashew nut chopped - ¼ cup
  7. Almond chopped - ¼ cup
  8. Honey - ¼ cup
  9. Water - ¼ cup



Method:

  1. Boil the milk for 20 minutes.
  2. Dissolve corn flour in a little cold milk and add to the boiling milk along with sugar.
  3. Stir constantly until thick.
  4. Remove from heat and cool.
  5. Add the melted gelatine and fresh cream.
  6. Combine the chopped almonds and cashew nuts, honey and water in a small saucepan and heat it. Then cool and add to the prepared milk.
  7. Cover the pan and chill for 20 minutes.
  8. Transfer it to a metal box and store in the freezer.

Ingredients

  1. Passion fruits - 12 large
  2. Sugar - 1 cup
  3. Water - 3 cups
  4. Lemon juice - ¼ cup


Method:

  1. Cut the fruits into half and scoop out pulp. Strain and remove seeds. The pulp should measure ¾ cup.
  2. Place sugar in a pan with 1 cup of water and bring to boil.
  3. Remove from fire and cool after boiling.
  4. Add passion fruit pulp, lemon juice and remaining water.
  5. Pour into a big vessel and freeze until set. Blend this in mixer until smooth.
  6. Return to the vessel and freeze until set.
  7. Scoop with ice cream scooper and serve with fresh fruits.

Ingredients

1. Dried black grapes - 250 g
2. Sugar - ½ kg
3. Condensed milk - 250 g
4. Vanilla essence - ½ tsp
5. Water - ¼ litre


Method:

1. Clean the dried black grapes well with water.

2. Cook them for 15 minutes with ½ kg of sugar and ¼ litre of water with occasional stirring.

3. Let it be cool and take the juice from the cooked grapes.

4. Filter it and keep aside.

5. In a bowl, take 250 g of condensed milk and add the filtered juice and ½ tsp of vanilla essence. Mix well.

6. Keep it in the freezer for setting (about 20 minutes is enough).

7. After setting, take the bowl from fridge and scoop the ice cream into the serving glasses.

8. Garnish it with some black grapes and serve.
