Ham Potato Slow Cooker Soup
Healthy ham potato soup, only 4 points on Weight Watchers!
Easy ham potato soup
Today, I decided to make another soup recipe I found on Pinterest. I am trying to make soups that I think my super picky children will enjoy and that are healthy for my husband and me. So far they don't have much interest in soups, but they did like my cheesy beer potato soup, there is hope.This slow cooker soup is really easy to make, and very good.
Ingredients
2 cups diced precooked ham
5 medium potatoes ( I used red)
1 medium onion
1/4 cup carrots
4 chicken bouillon cubes
4-5 cups water
1 cup milk
1/2 cup sour cream
salt and pepper (I also added a dash of garlic salt)
Dice your ham, onion, carrots and potatoes. Put these items in the crock pot. Dissolve the bouillon cubes in 4 cups of hot water and add to the crock pot. Cook on low for 6-7 hours and then add the milk and sour cream the last half hour of cooking. I used my Cuisinart immersion blender to blend everything in the end. I did leave it a bit chunky, but not too chunky. I garnished with shredded cheddar and sour cream and served it with a dinner roll. Absolutely wonderful! Believe it or not, this is a Weight Watchers recipe worth only 4 points! Really wonderful. Enjoy!
