Ingredients
- 1 medium Yukon gold potato, Microwaved
- 1/2 small onion, diced
- 2 cloves garlic, diced
- 2 tbs olive oil
- 1 ripe avocado, diced
- 1 sprig cilantro
- 2 cups vegetable stock
- 1 cup half and half
- salt and pepper to taste
Instructions
- Microwave potato. Set aside
- Place oil in sauce pan. Saute onion and garlic on medium until onion is clear. Remove from heat.
- Pour stock and half and half into blender. Add potato, onion and garlic and blend until smooth ( approx. 3 mins.)
- Pour soup into bowls, season with salt and pepper, add avocado evenly to each bowl and garnish with cilantro.
