Healthy Burrito Bowls

Healthy Burrito Taco Bowls


I have been expanding my range of recipes lately, and decided to take on a Mexican style recipe I found. These burrito bowls are healthy and very tasty. They are also a quick dinner to fix up for your family. I also found these to be very filling so a little goes a long way.

WHAT YOU NEED:

  • ½ Red Bell Pepper (chopped)
  • ½ Green Bell Pepper (chopped)
  • ¼ Cup of leaf lettuce (chopped)
  • ½ an Onion (chopped)
  • ½ Tablespoon of Cumin
  • 2 lean cuts of turkey or chicken OR 1 large can of low sodium white chicken breast (drained and chopped)
  • ½ Cup of Salsa
  • Whole Wheat Soft Tortillas
  • Cupcake pan
  • Mixing Bowl and Spoon
  • Food Processor OR you can do what I did and just chop the items up

HOW TO PREPARE:

Okay what I did first was I got out my mixing bowl and set it aside. Then I got my can of chicken, opened it, and then drained it of all the water. Then I placed the chunks of chicken on a cutting board and finely chopped it up. I put the chopped chicken into the mixing bowl and moved on to the next step. Now I took each vegetable that the recipe requires and finely chopped them as well and added those items to the mixing bowl. Then I added the cumin to the contents of the mixing bowl as well as the salsa. Then I mixed all the contents and put them into a microwavable bowl.

Now for the tortillas I got out my cupcake pan and pushed the tortillas to the bottom then removed the excess tortilla from the top. NOTE: DON’T WASTE THE EXTRA. Take the extra remnants of the previous bowl and use it to form another tortilla bowl. They don’t have to be perfect at all. Once you have as many tortilla bowls as desired turn your oven on to broil on high. Place the tortilla bowls into the oven. My tortilla bowls took about 5-10 minutes to reach the desired crunchiness I wanted, but it is completely up to you. Keep a watchful eye over them.

Now for the chicken salad part of the recipe take the contents in the microwavable bowl and put them into the microwave for about 2-2:30 minutes. This should warm up the chicken salad for you. However, you do not even have to do this if you would rather eat this cold. The original recipe has it as a cold salad, but I prefer it warm. After your tortilla bowls are done place them in bowl or on a plate for you to eat off of. Now take the chicken salad and scoop it into the tortilla bowls. The tortilla bowls will usually open up a little. There you have it! You have a fun and healthy meal. Enjoy.
