Healthy Cauliflower Recipes

Are you looking for healthy, low calorie vegetable recipes? No matter what type of diet you're on, it's likely that cauliflower is one of the vegetables you should probably be eating more frequently. Low in carbs, high in fiber, and rich with vitamins and minerals, cauliflower is one of the most diet-friendly foods there is.

Cheesy Cauliflower Casserole

Ingredients

  • 1 head of fresh cauliflower
  • 1 package of reduced fat cream cheese
  • 1 cup of reduced fat shredded cheddar cheese
  • Salt and pepper to taste

Preparation Instructions

Boil water in a large pot on the stove. Preheat oven to 350 degrees. Remove cream cheese from refrigerator to soften.

Wash cauliflower and remove florets. Place florets in boiling water and cook for five minutes. Drain.

Place cooked cauliflower in an 8 x 8 square casserole dish. Sprinkle with salt and pepper to taste. Cut softened block of cream cheese into quarters and place in the dish with the hot cauliflower. Stir until cheese is melted and florets are evenly coated.

Sprinkle shredded cheddar over cauliflower and cream cheese mixture.

Bake at 350 degrees for 30 minutes or until hot and bubbly.

Cauliflower and Green Bean Bake with Ham

Ingredients

  • 1 head of fresh cauliflower
  • 2 cans of cut green beans
  • 1 small onion
  • 4 slices of low fat deli ham
  • 1 cup of reduced fat sour cream
  • 1 cup of reduced fat shredded cheddar cheese
  • Salt and pepper to taste

Preparation instructions

Preheat oven to 35 degrees. Boil water in a large pot on the stove. Wash cauliflower and remove florets. Place florets in boiling water and cook for five minutes, then drain. Place cooked cauliflower in an 8 x 8 square casserole dish. Drain the green beans and add to the casserole dish with the cauliflower. Dice the onion and add to the cauliflower and green beans. Chop the ham into small pieces and add to the casserole dish. Sprinkle with salt and pepper to taste. Add sour cream and stir to combine. Sprinkle shredded cheddar on top of vegetable and ham mixture. Place casserole dish into oven and bake for 30 minutes or until the dish is hot and bubbly.

Roasted Cauliflower

  • 1 head of fresh cauliflower
  • Olive oil

Preheat oven to 375 degrees. Wash cauliflower and separate florets from stalk. Coat a cookie pan with a thin layer of olive oil. Place the cauliflower in a single layer on the cookie sheet. Drizzle olive oil on top of the cauliflower. Place in oven and roast for 20 minutes. If desired, turn on the broiler for two to three minutes to brown the top of the cauliflower, watching carefully to prevent burning.
