Healthy Chocolate Oatmeal Pancakes Recipe
This is one of my family's favorite breakfast recipes. Actually, my kids sometimes eat these pancakes as snacks during the day also. These pancakes are very nutritious, they are rich in protein, omega-3 fatty acids, vitamins, minerals and antioxidants. You can eat chocolate pancakes with any syrups and toppings, you can try them with honey, maple syrup, yogurt, berries and fruits.
Healthy Chocolate Pancakes
Ingredients
2 cups of kefir or plain yogurt
2 large eggs
1 tsp vanilla extract
1/4 cup of light agave nectar or honey
or any other sweetener you prefer to use
1 cup of whole wheat flour
1 1/4 cup of ground oatmeal (use only 1 cup if using yogurt)
(grind old fashioned oats in a food processor or a coffee grinder)
1/4 cup of ground flaxseeds
1/4 cup of cocoa powder
1 tsp of baking soda
1 tsp of baking powder
pinch of salt
oil for cooking
Instructions:
1. Beat together: kefir, eggs, vanilla and agave nectar or honey.
2. In a separate bowl, mix together all dry ingredients.
3. Combine wet and dry ingredients together.
4. Fry on med/low heat on both sides with lid on.
I use coconut oil, but other oils will work too.
