Healthy Vegan Cream of Celery Soup
Have a healthy hot cup of soup on a cold rainy day!
Soup is one of those hot foods that just warm you inside and out. Soup is wonderful on a rainy day when you are cold and tired. This recipe will give you the nutrition you need to face the rest of the afternoon at work. I like to freeze soup in single serving reusable containers. That way you can bring a soup lunch to work. This will save you time, money, and calories. Try it with a crusty hard roll and hot herbal tea. It makes a great lunch!
Cream of Celery Soup
4 cups of water
1 1/2 cup of washed chopped celery
1/2 cup of spanish onions
1/2 cup of fresh green peppers
1/4 cup of butter or butter substitute
2 cups of milk or soy milk
1 teaspoon of thyme
1 teaspoon of sage
1 teaspoon of paprika
2 cooked chopped potatoes
sea salt and cracked pepper to taste
Combine all ingredients in a large soup pot and bring to a boil. Lower the temperature and continue to cook for 1/2 an hour stirring occassionally. Allow to cool and then pour into reusable lunch containers freeze or refrigerate. Place a sticker on the lid of the container and write the date on it. Now think of how much time and money you will save on lunch.
