Perfect Summer Lunch: Chicken or Greek Salad (with recipes)

Updated on July 3, 2013

It seems like everybody wants to eat healthier food and enjoy it. But sometimes it's so hard to stop eating junk food and start live healthier. Fast food is so easy to grab and have a meal, but when we want to have a quality meal, it can be very hard and time consuming to prepare it.

This is why my favorite kind of food is a good salad. But of course, sometimes people feel like the salad is not a real meal, and they feel like they will become hungry after short period of time after eating it.

But that's not always true. I will present you two great salads that can easily replace some high caloric meal. They are easy to prepare, but also very tasty and healthy.

Ingredients for Chicken Salad

  • 150 g chicken meat
  • 1 cucumber, midle sized
  • 1 tomato
  • 1/2 purple onion
  • lettuce
5 stars from 1 rating of Chicken Salad

How to Prepare Chicken Salad

All you need to do is to fry some chicken meat (you can use any part of chicken, but of course, if you want it to be healthier, you should use white meat), cut cucumber, tomato, onion and lettuce, and serve it.

It looks very good if you use big plate and arrange all the cucumber on the bottom. Then you can add tomato on the next layer, and put some lettuce in the middle. Then you should put chicken meat over the lettuce and add an onion on top.

Ingridients for Greek Salad

  • Two peaces of feta cheese
  • One cucumber
  • One tomato
  • 1/2 purple onion
  • One green paprika
  • Few black olives

How to Prepare the Greek Salad

You can prepare this salad even easier than the first one, because you don't have to fry anything. This meal doesn't contain meat, but the great, most famous Greek cheese - feta, makes it even tastier.

So, all you need to do is chop some cucumber, tomato, onion and paprika, mix it in the plate, add a few olives and put the cheese on the top. Than, it would be great if you add some olive oil and basil on the top of everything.
