Hearty Healthy Lamb & Bean Soup

Good, Healthy Tasty & High Protein?

Balancing our need for nutritious food with our need for comfort food is always tricky in winter. This soup will tick all the boxes for nutrition, comfort, digestive health and culinary delight

Ingredients

  • 1kg A Grade Lamb Knuckle
  • 500g Dehydrated Kidney Beans
  • Half Lemon
  • Teaspoon Salt
  • Teaspoon Mixed Herbs
  • Teaspoon Paprika
  • Clove Garlic, Optional
  • One Onion, Optional
  • Teaspoon Barbeque Spice
  • Two Potatoes, Optional

Yields: 10 x 500ml Bowls of Soup

Easy to Make Soup Instructions

  1. If you have opted for the garlic and onions, chop both and add to a tablespoon of coconut oil in saucepan to brown
  2. Add lamb and brown (in own fat on low heat if you did not add onions and garlic)
  3. Squeeze the juice of half a lemon over the lamb as a natural meat tenderiser
  4. Add 1 litre of water to the slightly browned meat, coiver with pot lid and simmer for 30-40 minutes
  5. Add beans, another litre of water and all spices and simmer for 2 - 3 hours.
  6. Add last litre of water intermittently to keep soup liquid and prevent burning at base of saucepan
  7. Once meat is falling off the bone and beans are soft, serve!
