Hearty Oatmeal Pumpkin Waffles
Makes approximately 12 waffles.
Ingredients
- 2 eggs
- 1 cup whole wheat pastry flour
- 1 1/2 cups oats, rolled
- 2 teaspoons baking powder
- 1 tablespoon maple sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla flavoring
- 2/3 cup whole milk
- 1 cup pumpkin
- 1/2 cup walnut oil
- Olive oil
Instructions
- Separate egg whites into small mixing bowl and yolks into large mixer bowl with flat beater attachment, or large mixing bowl with whisk. Add vanilla, milk, pumpkin & walnut oil, beating until combined. In medium-sized mixing bowl, stir together flour, oats, baking powder, maple sugar & spice. Add dry ingredients into liquid ingredients, mixing just until combined.
- Season waffle iron with olive oil and preheat to medium-low heat or desired setting. Beat egg whites in small mixing bowl with whisk until stiff. Add to waffle batter and fold together just until combined. Drop by large ice cream scoop or 1/3 cup, filled generously onto preheated waffle iron.
- Cook until golden brown. Transfer to wire rack. Serve warm with melted butter and maple syrup.
