Home-made Banana Bread

Yields: 1 slice per person


  • 4 very ripe bananas, mashed, when peel is almost completely brown
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup vegetable/canola oil, Whatever you have on hand
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp cinnamon, surprise ingredient
  1. Preheat oven to 350 degrees. Grease a loaf pan or 2 depending on the size. In a medium sized mixing bowl, mash the bananas very well. Add the eggs, sugar, and oil... mixing very well after each addition. Add the cinnamon at this time and mix again. Sift the flour, salt, and baking soda before adding to the banana mixture. Pour in the loaf pans and bake for about 1 hour. Check at 55 minutes... if bread isn't done check in another 10 minutes.
