Homemade Raisin Carrot Cake
I was going through an old recipe book that belonged to my great aunt and found several recipes that had been cut out of newspapers, magazines, and food packages. This is simple recipe that caught my eye.
Ingredients:
½ cup shortening
1 cup sugar
½ tsp grated orange peel
2 eggs
1/3 cup of water
2 cups sifted flour
1 ½ tsp baking powder
1 ½ tsp baking soda
1 tsp salt
¼ tsp nutmeg
¼ tsp cloves
1 ½ cup raisins – chopped
2 cups grated carrots
Instructions:
Pre-heat oven to 350 degrees. Cream together shortening, sugar, and orange peel. Beat in eggs – one at a time. Add water. Sift together dry ingredients and beat into creamed mixture. Stir in raisins and carrots. Pour mixture into 2 greased and floured 8-inch round cake pans. Bake at 350 degrees for 35 minutes or until toothpick inserted in center comes out clean. Cool in pans for 5 minutes then turn out on racks to finish cooling. Frost with favorite cream cheese frosting, if desired.
Cream Cheese Frosting
Ingredients:
1 8oz box cream cheese – at room temperature
2 cups powder sugar
1 tsp vanilla
2 tbsp milk
Combine all ingredients and beat until smooth. Makes around 1 ¾ cups – enough to frost a 9-inch cake. The frosting goes on easier at room temperature. Let cake cool before frosting.
