Hot Italian Sausage roast vegetable linguini
Ingredients
- 1 package turkey italian sausage
- 1 can diced tomatos
- 1 whole zuchini
- 2 ribs celery
- 1 tsp oregano
- 1 tsp thyme
- to taste salt and pepper
- 2 bell peppers
- 1 small onion
- 3-4 cloves garlic
- 3 tbsp olive oil

This dish is loaded with veggies, meat and carbs. It is a real comfort food and is extremely filling. You can use mild or hot Italian sausage; this sausage even comes in turkey. Sure to please the meat lovers in your family and veggie lovers too.
Start heating a large skillet with a bit of olive oil, and then add your sausage. Turning occasionally until browned. Then slice into medallions and cook a bit longer until fully cooked.
While cooking chop up some basic pasta vegetables like celery, bell peppers, zucchini, onion and lots of garlic.
Take your bell peppers and zucchini, a little of the garlic and onion would help add flavors here, lightly toss in olive oil and roast in the oven or on the barbeque, or my personal favorite in a little olive oil cooked on a gas stove. With a gas stove you can get some great flavors.
Add your celery and onion to the sausage and saute until the onions are tender.
Now add a can of whole stewed tomatoes and season with some thyme, oregano, salt and pepper.
Let stew for awhile and get your pasta cooking. I like to use linguine. Drain your pasta, put back in the pot and pour your sauce over the noodles and cook on low heat until some of the tomato juices soak into the pasta.
This dish can be served with a bit of parmesan cheese or mozzarella but it doesn’t really need it. Delicious, filling and sure to please any family, it is a bit spicy even when you use mild Italian sausage so this may be a dish for more mature pallets.
