Hot & Spicy Fried Chcken

When I say hot and spicy fried chicken I am not talking about fried chicken with hot sauce pour over it or some hot wing sauce out of a bottle noooo, I'm talking about a Asian spiced sauce that is made from scratch to give your fried chicken that extra punch and that tangy sweet and sour taste with some heat follow me and I will show you my version.

Hot & Spicy Fried Chicken

Ingredients

1-2 1/2 TO 3 pound fryer chicken, cut into serving pieces

4 teaspoons of grated orange rind

2/3 cup of orange juice

2 teaspoons of sea salt

1/2 teaspoon of dry mustard

1/2 teaspoon of smoked black pepper

1/2 teaspoon of chipolte tabasco sauce

1/2 cup of flour

1 teaspoon of smoked paprika

1/2 cup of lard

1 tablespoon of water

Methods

To begin lets marinate the cut up chicken. Place the cut up chicken in a shallow dish.

Using a medium bowl combine the grated orange rind, sea salt, mustard, smoked pepper and the chipolte tabasco sauce pour the mixture over the cut up chicken cover in plastic wrap then place in the refrigerator for 2 to 3 hours

After your hour of marinating remove the chicken from refrigerator pour off the liquid into a bowl cover and place back in the refrigerator.

Now it's time to get your fingers a little dirty ....using a shallow dish add your flour the remaining sea salt, smoked paprika, and the smoked black pepper mix these ingredients well at this point add your lard to a large skillet let your grease get hot ...you can test your grease by taking a pinch of flour and dropping it in the hot lard if it spreads and bubble a little then you ready to fry some chicken

Now grab your flour mixture and add a few pieces of chicken and coat very well sake off any access flour then place in the skillet until it's golden brown then remove from the grease repeat this process until all the chicken is is cooked golden brown.

After all the chicken is cooked pour off all the grease but 3 tablespoons of the pan drippings add in the seasoned flour let it cook until the flour is blended in when it is all blended in add the marinade liquid and the water let it simmer until the sauce thickens, while the sauce is thickening up place the the chicken in a deep serving bowl pour the sauce over the chicken let the chicken and sauce sit for a few minutes then serve and enjoy. .
