How To Make and Use a Cornbread Mix

Cornbread is Comfort Food
I have always found cornbread to be a warm and comforting food. It goes well with many different meals, and works well as a side or even as a dessert.
It is especially convenient to make up a batch of cornbread baking mix in advance, so that when you want to make any type of cornbread treat, it is ready in a short time.
Cornbread Baking Mix
Makes about 7 cups of the Cornbread Baking Mix
Ingredients:
- 3 cups corn meal
- 3 cups flour
- 1 cup sugar
- 2 Tb baking powder
- 1 1/2 tsp salt
Directions:
- Mix ingredients together
- Store in an airtight container or jar
- Store in a cupboard, or any cool, dry place
Cornbread Loaf or Muffins
I use this recipe to make quick and delicious corn muffins or bread quite often. They are a tasty addition to many meals, and the muffins make good portable snacks. They are also a great item to bake for a get together. I made quite a few mini ones recently for a family function, and they were a hit.
Cook Time
Ingredients
- 2 1/3 cups Cornbread Baking Mix
- 1 egg, beaten
- 1/4 cup canola oil
- 1 cup milk
Instructions
- Preheat oven to 400 degrees F (200 degrees C).
- Grease muffin pan or loaf pan
- In large bowl, mix ingredients well
- Spoon batter into prepared pan
- Bake for 15-20 minutes, or until a toothpick inserted into the muffin or loaf comes out clean
Cornbread Pancakes
On weekends I enjoy making pancakes, and sometimes I like to try something new. At this time I had made up some of the baking mix, and had previously made the cornbread muffins. I thought it would make a tasty variety of pancakes, and once I made it I confirmed my belief. They are delicious served with maple syrup, or with honey butter.
Cook Time
Prep time: 5 min Cook time: 15 min Ready in: 20 min Yields: Serves three people 2 medium pancakes
Ingredients
- 1 1/2 cups cornbread baking mix
- 1 1/2 cups milk or yogurt
- 2 eggs
- 1/4 cup canola oil
Instructions
- Add the baking mix into a large mixing bowl
- Mix in the wet ingredients
- Add oil to the pan or griddle, if necessary (if it has a nonstick coating, you may skip this step)
- Turn the stove to low/medium, or the electric griddle to about 325 degrees
- Using a ladle or large spoon, add a scoop of the pancake batter to the pan or griddle
- Cook for about 3 minutes, or until you see bubbles in the pancakes
- Flip them over, and cook until brown on the bottom, another 2 minutes or so
- Transfer to a plate, or else put in a 250 degree oven to keep it warm until you are ready to serve
Cinnamon Honey Butter goes well on both the cornbread and the pancakes
