How To Make Cornbread Using My Corn Bread Baking Mix

I use this recipe to make quick and delicious corn muffins or bread quite often. They are a tasty addition to many meals, the muffins make good portable snacks, and they are also a great item to bake for a get together. I made quite a few mini ones recently for a family function, and they were a hit.

Prep time: 3 min
Cook time: 20 min
Ready in: 23 min
Yields: 1 loaf or 12 muffins
I make my Cornbread Mix in advance, and store it in a container for when I want to whip up a quick batch of cornbread or muffins

Ingredients

  • 2 1/3 cups Cornbread Baking Mix
  • 1 egg, beaten
  • 1/4 cup canola oil
  • 1 cup milk

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Grease muffin pan or loaf pan
  3. In large bowl, mix ingredients well
  4. Spoon batter into prepared pan
  5. Bake for 15-20 minutes, or until a toothpick inserted into the muffin or loaf comes out clean

      Right out of the oven....delicious. Butter...real butter...dripping off of them. You can feel your arteries clogging from the butter and you don't care at all. :)

      Bill, you made them sound even better! Corn bread is such a comfort food for me, and I enjoy it immensely. Over a week ago I made the mini ones, and sent some with Andy when he went to NH for the day. It is such a portable snack.

      Thank you, Bill it's sweet of you to read it on a night when you would normally not be reading hubs. It's a short one, but it is to the point.

      I had a very good weekend in CT, at the condo as well as at Andy's brother's, where their niece had her baby shower. The men went down into the "dungeon" to play games while us woman had the baby party. I hope your weekend went well, too.

      Careermommy, what funny timing! Cornbread is so delicious. Mixes are convenient. Sometimes I use them, and sometimes I whip up a fresh batch from scratch, and either way they come out tasty.

      I like making my own mixes, so that I can use them to bake when I am short on time.

      I use pans quite often, too, but the muffins are convenient. They are easy and mess-free to pack in a lunch bag, or bring on a picnic. And no cutting is required.

      Great and easy recipe Kathryn. You might want to add that cornmeal is gluten free if there is no white or wheat flour in your recipe. There are lots of people who are gluten free looking for delicious recipes.

      It actually does have flour in it, Suzzycue, but I will be sure to mention when a recipe of mine is gluten-free. I have noticed that a lot of people are looking for gluten-free recipes.

      I love cornbread!...and find it such a great accompaniment to chili and any kind of BBQ. I must try the baking mix--a real Achilles heel for this chef, since my pastries are mostly shot-puttable...a new word!! 5 Stars for this easy and delicious addition.

      Your cornbread recipe is a lot easier than the one I bake. I actually use the recipe that Disney's Fort Wilderness Lodge uses and it's delish, but time consuming. Thanks for sharing your recipe!

      Sunshine, it is especially fast if you make the cornbread mix ahead of time, or else use one of those store bought boxes.

      I have even cheated before by using the microwave! Haha. Maybe sometime I will post that, but only after I try it again to make sure I get it right.

      I love delicious recipes that take time, but sometimes it is nice to find a shortcut, or try something quicker when you don't have as much time.
