How to Make Buffalo Chicken Quesadillas

This is a great recipe to use up leftover chicken or for an easy lunch or dinner. Use your favorite buffalo or hot sauce to toss the chicken. Shredded cheddar or mozzarella cheese melt beautifully to bind the whole thing together.

- .5 - 1 lb chicken breast
- 1/4 cup hot sauce
- 6 large flour tortillas
- 4 tbsp butter
- shredded cheddar cheese
- If you're using fresh chicken, you will need to cut it into small chunks and brown in a large skillet with 2 tbsp of vegetable oil. If you are using left over chicken, cut into small pieces.
- In a mixing bowl, toss the chicken with your hot sauce. I used Frank's Red Hot sauce. Toss until thoroughly coated.
- Lightly butter one side of a flour tortilla and place it in a hot skillet. Sprinkle one half of the tortilla with shredded cheese. I used shredded Mexican cheese, but cheddar or mozzarella will work. Add a layer of the buffalo chicken. Sprinkle on a little more cheese. Carefully fold over the other side of the tortilla and press with a spatula.
- Cook both sides until golden brown and cheese is melted. Serve with a side of ranch dressing and celery sticks. You could also serve with fresh tortilla chips and salsa.
