How to Make Healthy and Delicious Penne Bruschetta with Shrimp
Easy and Quick Five Ingredient Dinner!
We all have those nights when we are rushed for time, but we still would like to have a healthy meal. Penne bruschetta with shrimp is just the meal! With only five ingredients, this meal can be served within 30 minutes from start to finish!

Ingredients
- 1 package (375g) penne rigate
- 3/4 cup bruschetta topping, fresh from the deli section
- 12 oz. cooked white shrimp, 31-40 Count, thawed, tails removed, patted dry
- 1/2 cup Kalamata olives, pitted, chopped
- 1/2 cup basil, fresh, roughly chopped
Cooking and Assembling the Penne Bruschetta with Shrimp
- Cook pasta according to package directions.
- While pasta is cooking, heat bruschetta, shrimp and olives in a large skillet over low heat.
- Drain pasta well. Add to bruschetta mixture and toss. Stir in chopped basil.
- Serve while warm accompanied with a salad and garlic bread.
Easy Variation of Penne Bruschetta with Shrimp
This recipe is very easy to modify to include fresh vegetables. For the variation that is displayed in the photographs, chopped celery, sweet yellow peppers and broccoli florets have been added. Not only do these vegetables add their crispness with a delicate "crunch" but they also provide extra nutrition to the meal.
Optional Ingredients
- 1/2 cup celery, chopped
- 1/2 cup sweet yellow peppers, chopped
- 1/2 cup broccoli florets
If you are adding the optional vegetables, follow the instructions as outlined above. This step can be inserted after Step 2 in the instructions:
Sauté celery, sweet peppers and broccoli florets in second skillet over medium heat. Sauté until almost tender. The vegetables should retain their crispness. Add to bruschetta mixture. Keep warm under a lid until pasta is cooked.

This is a wonderful entreé as a stand alone dish. However, I prefer to serve this meal with a side of Sarah's Caesar Salad and freshly baked garlic toast.
When I have time, I swap the pre-made deli bruschetta with a fresh bruschetta that I make from scratch. This is a very simple and easy recipe for bruschetta and can be adapted to any recipe that you are using.
