How to Make Sweet Potato Pancakes.

The year 2013 held something interesting. The first day of Hanukkah fell on Thanksgiving. This coincidence inspired many fun and interesting recipes for American Jews. It was an attempt to combine the traditional foods of both holidays. It was while reading some of these unusual and fun recipes that the idea of sweet potato pancakes came to me. We decided not to make ot at our Thanksgiving feast because we weren't willing to give up our favorite sweet potato recipe. Lucky for us, there are eight days of Hanukkah. That gave us plenty of time to try all the recipes!
The search for the perfect recipe
When I decided to make sweet potato pncakes, I knew I needed a recipe. Pancakes are not my forte. Well, if you do a search, you will find hundreds of recipes ranging from:
- savory to sweet
- cake batter to croquettes
Not being certain of what results I was aiming for, this was the recipe I came up with. I used Bob's Gluten Free Pancake Mix but you can use any pancake mix or basic pancake recipe of your own.
This is a very quick and easy recipe that came out great on the first try!

Grated or mashed?
These pancakes came out great. They were moist and delicious. I think the next time around, I will make them with fresh, grated sweet potatoes and go for the savory flavor. I think that would make a perfect combination of sweet and salty.
- 1 cup Bob's Red Mill Gluren Free Pancake Mix, you can use any basic pancake mix or recipe.o
- 1/2 cup lowfat milk, I used 2%
- 1 large egg
- 1 tbs oil
- 1 large can sweet potatoes, You can also use cooked, fresh sweet potatoes.
- 1/4 tsp salt, To taste
- 1/4 cup chopped pecans or walnuts, optional.
- Mix the egg, oil and pancake mix together in a medium sized bowl.
- In a separate bowl, mash the sweet potatoes. I left mine chunky but you can mash to whatever consistency you prefer.
- Blend the sweet potatoes into the pancake mix.
- If you are adding pecans or walnuts, blend them in now.
- Drop by the tablespoon into the heated oil and prepare as you do any pancakes.
Sweet potato pancakes with syrup.
Potato pancakes are often served with sour cream and applesauce. Because our pancakes came out sweet, I added sliced apples instead of applesauce but the sour cream was a great accompaniment! I also saw several other great sounding toppings that would have been perfect for Thanksgiving, including brown sugar, maple syrup and honey. I have included one here:
1/2 cup brown sugar
1 tbsp butter
1/4 cup water
1/4 chopped pecans or walnuts (optional)
Mix all the ingredients together and heat over a low light until the sugar melts into a glaze.
Pour over your pancakes and top with whipped cream. It makes a pretty decadent side dish or dessert.
