Easy to make. Delicious and different.
Ingredients:
1 russet potato (diced)
1 med. onion (diced)
2 carrots (diced)
2 cups fresh green beans
2 cups mushrooms (sliced)
1 tablespoon yellow curry paste
1 teaspoon fish sauce
1 can coconut milk
2 fillets of mild fish (Tilapia)
In a skillet or wok, heat 2 T. of light oil (coconut oil works great). Add diced potatoes. Cook these until they are starting to get tender. Then add the onions, then carrots in layers. Cook for two minutes with a lid before your stir. Toss the mixture and layer green beans. Cook for 2 more minutes on low heat with the lid on. Layer on the fillets and cover until cooked.
When you go to remove the mixture, you may need to remove the fish first, delicately, then remove the vegetables.
While the fillets cook. Mix curry paste and coconut milk in a bowl. Pour mixture over fillets and veggies. Serve over basmati rice.
Some possible variations: For a spicier version add split red chiles to the potatoes. If you like garlic, add it to your heart's content.
