Three Cheese English Muffin Pizzas Recipe

These three cheese mini muffin pizzas would make wonderful appetizers for adults and meals for kids at your next party! They are really yummy and a hit with my two year old. This recipe can be found on YouTube by Melinda Longoria.

Ingredients

  • 7 English Muffins
  • 1.5 Cups Pizza Sauce
  • 3/4 Cup Mozzarella Grated
  • 3/4 Cup Parmesan Grated
  • 3/4 Cup Cheddar Grated

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a cookie sheet with aluminum foil. Spray the foil with non stick cooking spray. Separate the muffins into halves and place the muffins crust-side-down on top of the aluminum foil. Grate the three cheese ingredients (Mozzarella, Parmesan, & Cheddar). In a medium size bowl, stir the following three cheese ingredients together until thoroughly combined.
  2. Put one tablespoon of the pizza sauce on each of the muffin tops. Spread the sauce evenly on the muffin tops with the back of your spoon. Next, spread one tablespoon of the cheese mixture on top of the sauce on each muffin. Sprinkle any extra leftover cheese evenly on top of the muffins.
  3. Place the cookie sheet on the center rack in your oven. Cook for about 15 minutes. Cooking time may vary depending on your oven. Check the muffins at 10 minutes and then cook for an additional 5 minute interval or longer until the cheese is melted. Let the pizzas cool for about 5 minutes or longer before serving them to your child.

  • Use whatever ingredients that you have on hand to make your pizzas. The pizzas should consist of some type of sauce and cheese. The ingredients that I used are just a suggestion. Use any kind and number of cheeses that your child prefers. For the pizza sauce, you can also supplement with a spaghetti sauce or try a white sauce like Alfredo!
