How to make Sookhi Urad Dal Amritsari?
Dry Urad dal Amritsari is a famous dish from Amritsar and is quite popular there. This dish is made using split skinless black gram and is rich in proteins. This is very easy to make and doesn’t take much time. We often make dal (pulses) at home and this one is quite different from the usual dal preparations. My son likes it because of its spicy flavor. Here’s the recipe to make sookhi urad dal Amritsari at home:

Ingredients for Sookhi Urad Dal Amritsari
- Split skinless black gram (which is popularly known as dhuli urad dal) soaked for 1 hour, boiled till they turn tender, 1 1/2 cups
- Cooking Oil 1 tablespoon
- Cumin seeds (jeera) 1 teaspoon
- Asafoetida (hing) 1/4 teaspoon
- Green chillies chopped, 1 teaspoon
- Ginger cut into thin strips, 1 inch
- Schezwan chutney 2 tsp
- Lemon juice 1/2 tablespoon
- Salt according to taste
- Turmeric Powder ¼ tsp
- Red chilly powder ¼ tsp
- Coriander finely chopped
Instructions
- Take the urad dal and clean it properly. Now thoroughly rinse it with water and soak it in water for an hour. Now take the soaked urad dal and drain the water. Cook the urad dal in a pressure cooker by adding one cup of water, ¼ tsp of turmeric powder and salt according to taste in it. Do not overcook the dal.
- Heat cooking oil in a non-stick kadai or pan. Now add asfoetida. When it changes color, add cumin seed and then add green chillies & ginger and saute for a few seconds till fragrant. Now add boiled urad dal and Schezwan chutney and cook on high flame till all the moisture evaporates and the dal becomes dry.
- Add lemon juice to the dal and mix well. Switch off flame.
- Transfer the dal into serving bowl and garnish with finely chopped coriander leaves. Serve hot with roti, poori or naan.
