How to Make Carrot Methi Sabzi
Carrots and methi (fenugreek leaves) both are rich in nutrients. When we use carrots and methi as the ingredients, the dish is bound to be healthy and nutritious. Since carrots and methi are available during the winter, so this dish can only be prepared during the winter season.
My son is a bit picky about food and he wants to have variety every day. Since there is a limited choice of vegetables available in the market, so I try to create variety in food by trying different dishes. This dish isn’t too difficult to make and is a perfect health food for your kids. Here’s the recipe:

Ingredients for Carrot Methi Sabzi
- Carrots 5 medium, chopped
- Fresh methi (fenugreek leaves) 1 medium bunch, chopped
- Cooking Oil 2-3 tablespoons
- Onion 1 medium, finely chopped
- Garlic-ginger paste ½ teaspoon
- Fresh chillies paste ½ teaspoon
- Turmeric powder ½ teaspoon
- Salt according to taste
- Coriander & cumin powder 1 tablespoon
- Lemon juice 1 teaspoon

Instructions
- Wash and peel the carrots and chop them into small pieces. Wash methi thoroughly under running water, drain and chop it finely.
- Heat the cooking oil in a non-stick kadai/pan. Add the garlic-ginger paste and sauté till light brown.
- Add the green chilli paste and chopped onion. Saute for 3-4 minutes till it turns golden brown.
- Add the chopped carrots & methi and mix well.
- Add the turmeric powder and salt according to taste. Mix it well, cover and cook on low flame, stirring occasionally, till the carrots are properly done.
- Sprinkle the coriander-cumin powder & lemon juice and mix well.
- Serve the carrot methi sabzi hot with chapatti or naan. You can serve daal or curd raita as an accompaniment.
