Chocolate Lava Cakes

This recipe is not something I came up with, so I cannot take the credit. I watched videos on youtube, researched other peoples Lava Cake recipes, and settled on the one I've shared here after only minor modifications. I cannot advise on the nutritional value of this dessert, but it's safe to assume it's very unhealthy, haha!

Every now and then a craving for a big chunk of chocolate takes over, these Lava Cakes will satisfy that craving. They are a very rich dessert, very filling, but taste like they took hours slaving to make. I am not a baker. These are from scratch and if you cannot bake, you can make these and you will surprise and delight your family, guests, and friends.

I'm still in awe of how much the Instant Pot can do. From ribs to soups, to yogurt and cakes, this machine is incredible. The only downside is that you can only make 4 at a time. I can't figure out how to make more at once. You can always double the recipe and make 8 or more in batches if needed. Or buy another Instant Pot!

A few ingredients

Things you'll need

  • 4 6 oz ramekins
  • 1/4 tsp salt
  • 2 eggs
  • 2 egg yolks
  • 1 tsp instant coffee
  • 4 oz semisweet chocolate
  • 1/2 cup butter
  • 1 tsp vanilla extract
  • 6 tbsp flour
  • 1 cup confectioner's sugar/powdered sugar
  • 1 tbsp granulated sugar
  • 1 tbsp granulated sugar
  • metal trivet

Instructions

  1. Spray the insides of the ramekins with baking spray, or grease them, then coat with granulated sugar.
  2. Place the butter and the semisweet chocolate in a dish that can be heated to melt these ingredients. You can melt them in a microwave in 15-30 second intervals also. Melt completely and stir well.
  3. Add 1 cup of confectioner's sugar, and stir well.
  4. Add in the eggs, yolks, vanilla, coffee, flour and salt. Stir, stir, stir until well blended.
  5. Place the metal trivet in the Instant Pot and add 2 cups of water.
  6. Divide the batter you made evenly in the 4 ramekins. Then place 3 into the pot and one on top of those 3 (staggered).
  7. Close the pot, seal the lid, and cook on manual high pressure for 9 minutes. When the pot is done cooking, do a quick release of pressure.
  8. Carefully remove from the Instant pot. Carefully flip upside down on serving plates, sprinkle with more powdered sugar and serve warm. You can also add magic shell chocolate, or a scoop of your favorite icecream on the side.
