Island Bites: Arroz con espinacas y almendras (Rice with Spinach and Almonds)

Arroz con espinacas y almendras (Rice with Spinach and Almonds) is a quick and easy healthy recipe.


Spinach is one of the world's healthiest vegetables. It has extremely high nutritional richness. Cooking spinach increases its benefits.


This recipe is also a great vegan dish. Simply, omit the Parmesan cheese.


Instructions

  1. Strain thawed spinach to remove excess liquid. Set aside.
  2. In a big pan, toast slivered almonds for 2 or 3 minutes. Remove almonds and reserve.
  3. Heat some oil in the same pan. Saute onions for three or four minutes at medium temperature. Add garlic and red pepper flakes. Saute for two or three more minutes.
  4. Add the spinach and combine. Saute for a couple minutes. Add cooked rice, salt and pepper. Mix well. (You could add a little water or broth if needed.) Saute until rice is heated.
  5. Remove from heat. Add Parmesan and almonds. Mix until well combined.

  • 2 cups cooked rice
  • 1 package (10 oz) frozen spinach, thawed
  • 1/2 medium onion, minced
  • 2 garlic cloves, minced
  • 1/4 cup Parmesan cheese, grated
  • 1/2 tsp red pepper flakes
  • olive oil
  • salt & pepper
  • slivered almonds

      Looks like Thief12 comes to your house to get fed!!! LOL I love spinach. Other members of household are not so fond of it, so it's nice to find a recipe that might help them enjoy spinach as much as I do. Interesting recipe.
