Arroz con espinacas y almendras (Rice with Spinach and Almonds) is a quick and easy healthy recipe.
Spinach is one of the world's healthiest vegetables. It has extremely high nutritional richness. Cooking spinach increases its benefits.
This recipe is also a great vegan dish. Simply, omit the Parmesan cheese.
- Strain thawed spinach to remove excess liquid. Set aside.
- In a big pan, toast slivered almonds for 2 or 3 minutes. Remove almonds and reserve.
- Heat some oil in the same pan. Saute onions for three or four minutes at medium temperature. Add garlic and red pepper flakes. Saute for two or three more minutes.
- Add the spinach and combine. Saute for a couple minutes. Add cooked rice, salt and pepper. Mix well. (You could add a little water or broth if needed.) Saute until rice is heated.
- Remove from heat. Add Parmesan and almonds. Mix until well combined.

- 1 package (10 oz) frozen spinach, thawed
- 1/2 medium onion, minced
- 2 garlic cloves, minced
- 1/4 cup Parmesan cheese, grated
- 1/2 tsp red pepper flakes
