Italian Meatloaf
1.5 Lbs Ground Beef
3 oz Pancetta Thin Sliced
1 cup of bread crumbs
1/3 Cup Tomatoe Sauce
1/2 cup Parmesean
3 Tablespoons Parsley
3 Tablespoons Oregano
1 Egg
2 Tablespoons Minced Onion
1 Tablespoon Crushed Red Pepper
1 Teaspoon Cumin
1 Teaspoon Black Pepper
In a Large bowl, combine the ingredients except the pancetta. Mix with a large spatula dipped in olive oil until the ingredients are blended well.
Now, line a loaf pan with the pancetta, try and get a pretty good layer over the bottom and sides of the pan, the grease in the pancetta will serving as a lubricant as well as a tasty ingredient in this dish. Line it well so the ends are covered, now pack the combined ingredients from the bowl into the pan so they fit snugly in the pan.
Now that your meatloaf is ready to cook. Get a cookie sheet, grease it, and turn the loaf pan upside down on top of the sheet, the meatloaf will slide onto the pan. Now cook on 450 for 30 minutes. This meatloaf goes great with breadsticks, especially my Best breadsticks recipe! ;)
