1. Italian Sausage - Mild or Spicy depending on your preference. Most good supermarkets will carry a locally made Italian Sausage that is fresh and will result in a much juicer and tastier sandwich then using the larger brand name sausages.
2. Red Onion - You can use other kinds of onions if you prefer.
3. Red Bell Peppers - While you can use green or yellow bell peppers or a combination, I prefer the the red ones, but to each there own, thats what makes cooking fun, you have to make what you like.
4. Bread Rolls - I prefer a Dutch Crunch roll as it has a tougher outside keeping the sandwich easier to hold than a bread that would get loose and break apart from the juices of the Italian sausage.
Cooking
When preparing the vegetables I like to cut the red bell peppers in half and remove the top stem portion and the seeds and lightly rinse under water. Top off the tops of the onions and cut them in 1/4 inch circles. I always like to put olive oil on the vegetables prior to placing them on the grill, if you are using a skillet to cook them you can just put the oil in the skillet once it is at temperature. Also it is good to season the vegetables now on both sides with salt and pepper.
The bread can also be prepared to hold maximum amount of grilled red bell peppers and red onions by slicing the large roll in half like a hot dog bun, but them removing portion of the bread to make an area to place the sausage and the vegetables.
You can just boil the Italian Sausage in water on the stove, but I prefer to boil it for about 10 minutes to cook it mostly the way through and then remove and let the sausage join the vegetables on the grill to get the nice grill flavor.
Once the vegetables and the sausage are finished cooking take them off the grill and let them rest for a couple of minutes, cut up the red bell peppers into strips and chop up the onions and then prepare your Italian Sausage Sandwich with Red Bell Peppers and Red Onions.
