Shish Kebobs
Kebob is usually referring to Shish Kebob. Shish, meaning skewer, in Turkish, and kebob meaning grilled meat, fruit or vegetables.
I like to marinate my kebobs before grilling or broiling. I have recipes for lamb kebobs, meatball kebobs, steak kebobs and fruit kebobs.
Lamb Kebobs
1 teaspoon curry powder
1 teaspoon salt
3 bay leaves
6-8 peppercorns
2 Tablespoons grated onion
1 large garlic clove, crushed
1/4 cup lemon juice
1/4 cup dry red wine
1/3 cup olive oil
2 pounds lamb , cut in 1 1/2 inch cubes
green pepper, cut in squares
small white onions, partially cooked
tomato wedges
Combine seasonings, lemon juice, wine and olive oil in bowl. Place lamb, green pepper and onions in mixture and allow to marinate 4-12 hours. Then, drain meat and vegetables. Reserve marinade
Alternately place marinated meat, green pepper, onions, and tomatoes on skewers. Place kebobs on grill or on broiler pan and brush with the marinade. Grill or broil, turning and basting until kebobs are browned on all sides. Makes 6 skewers.
Serve with rice pilaf and cucumbers with sour cream.
Meatball Kebobs
Kids love these meatball kebobs. You may even get away with adding veggies to theirs, too!
1 cup soft bread crumbs
1/4 cup warm water
1 1/2 pounds ground chuck
2 eggs, slightly beaten
2 Tablespoons grated Parmesan cheese
1/4 cup fresh chopped parsley
1/2 teaspoons salt
1/4 teaspoon pepper
4 bacon slices, cut in 1 inch pieces
1/2 cup mushroom caps
2 green peppers, cut in 1 inch squares
3 tomatoes, cut in wedges
1/3 cup butter, melted
1 teaspoon garlic salt
1/4 teaspoon pepper
Soak bread crumbs in water for about 5 minutes. Squeeze out water. Then combine the soaked crumbs with the ground chuck, eggs, cheese, parsley, salt and pepper. Mix lightly and thoroughly. Shape mixture into 30 balls about 1 inch in diameter. Arrange meat balls, bacon slices, mushrooms, green peppers and tomatoes alternately on 6 inch skewers, beginning and ending with meatballs. (Use 10 skewers)
Combine melted butter, garlic salt and pepper. Arrange kebobs in a pan and brush with the garlic butter. Broil for 5 minutes. Turn kebobs, brush with garlic butter, and broil another 5 minutes. Makes 10 kebobs.
Steak Kebobs
1 pound sirloin steak, cut into 1 inch pieces
1 cup Italian salad dressing
8 small onions, partially cooked
8 mushroom caps
2 green peppers, cut in 1 inch square pieces
2 strips bacon, cut into squares
8 hoagie rolls
Marinate steak in dressing for 2 hours or overnight. Take steak out of the marinade and skewer alternately with onions, peppers, mushrooms, and bacon. Grill or broil skewers, turning until done. Serve on rolls. Makes 8 servings.
