About Kadai Paneer
Kadai paneer is a popular North Indian paneer or cottage cheese dish prepared in a sloping type of wok called kadai or kadhai. If you do not have this, you can use a thick bottomed pan. You can buy paneer from the market or make it at home. In this article I explain how to make paneer at home. You can make paneer in advance and can store it for up to 2 days in the refrigerator.
This is a one pot dish prepared with both whole spices which are roasted and then coarsely crushed and powdered spices in a tomato based gravy.
Have it as a side dish to a meal and pair it with paratha, naan or roti.

Ingredients
- 3 tbsp oil
- 100 grams paneer/cottage cheese, cut into cubes
- 1 medium sized onion, peeled and quartered
- 4 medium sized tomatoes, chopped
- 1 medium sized bell pepper, deseeded and cut into squares
- 1 tbsp garlic paste
- 1 tbsp ginger paste
- 2 tsp saunf/fennel seeds
- 5-6 sabut kali mirch/peppercorns
- 1 tsp kasuri methi/dry fenugreek leaves
- 1/2 tsp garam masala
- 1 tsp salt
- 1 tsp jeera/carom seeds
- 1/2 tsp kashmiri/plain red chilli powder
- 3 tsp coriander seeds
- 4 small or 2 large red chillies, dry and whole
- 3 lavang/cloves
Instructions
- Dry roast the red chillies, saunf, 1/2 tsp jeera, 2 tsp coriander seeds & peppercorns till they leave their aroma. Keep heat on medium. Cool & grind to a coarse powder. This is the kadai powder
- Heat oil in kadai. add 1/2 tsp jeera & 2 red chillies. Saute till the jeera crackles
- Add 1 tsp coriander seeds, ginger & garlic pastes & saute till lightly roasted
- Add tomatoes & stir till tomatoes turn soft, about 5-6 minutes
- Add 1 tbsp kadai powder (the coarsely ground roasted spices in step 1) and stir for 30-40 seconds
- Add the red chilli powder, garam masala, kasuri methi & salt. Stir for another 30-40 seconds
- Add the onions & capsicum & paneer cubes. Stir cook for 5-6 minutes till the onions and capsicum are half cooked. Ensure the veggies retain their crunch. Keep heat on low or low medium
- When done transfer to a serving dish
- Garnish with some kadai powder & serve with roti, naan or paratha
