CHICKEN WALDORF SALAD
Another Lazy Gourmet recipe from my mom in law: Terrific with leftover turkey, too; that is, if you have any leftover turkey!
1 broiled chicken breast
1 crunchy apple, half peeled
1 stalk celery
1/2 cup raisins
1/4 cup walnuts (more on these in a minute)
mayo to taste
Cut chicken into bite size pieces, cut apple and celery into bite size pieces. Half the apple retains the peel for color, be sure to scrub it well before cutting. Add raisins. Puree walnuts by crushing in a small plastic bag; I use the edge of a cutting board or a rolling pin to smush the walnuts. Two things happen here: people who have problems with larger nuts in dishes will be able to enjoy their good taste, and they go really far when they're all macerated like this. A couple bigs dollops of mayo, mix and chill for about an hour, or just go ahead and eat it all up if you're hungry already!
The chicken breasts I buy in quantity and broil all at once. They keep in the freezer in bags until you're ready to use them, defrost a couple minutes in the microwave and they're ready to put in salads or just eat plain for dinner. To broil: four breasts on the broiler rack, skin side down first, sprinkle with garlic powder and sea salt on both sides. Turn and broil on other side about 10 minutes, turn oven off and close door, let rest about an hour. They will cook the rest of the way without burning, get nice and crispy through and through!
