Lazy Gourmet One Pot Breakfast

One of my favorite super easy meals is what I consider a Lazy Gourmet meal -- quick, easy, and delicious, as fast to fix as it is to eat. Well, almost. Breakfast in one pot!

Start grits in cold water, about 1/4 cup of grits to one cup water. Add 1/4 cup cottage cheese, 1/2 teaspoon sea salt, ground fresh pepper if you like that, and some of that shredded taco cheese. Sprinkle a bunch on top. Let it simmer a few minutes, stir in an egg, stir another minute until the egg is cooked (this makes the grits all fluffy and light), remove from heat, and eat. Don't even need a dish. Talk about La - Zee!

This is a basic recipe for one person who doesn't mind eating out of a pot. You can make more by adding more water, grits, etc. if you have company. To spiff it up a whole lot, make a double or triple recipe and pour it in a casserole, bake in the oven for about 15 minutes. VIOLA! as my old sailing buddy used to say, Cheese Grits!
