Lentil Rice (Khichdi) Recipe
There is nothing better than a Lentil Rice which is also known as Khichdi when you are unwell or during a rainy day. It is also an easy food to make when you want to eat light or when you do not want to bother with making side dishes. How to prepare Lentil Rice - Ingredients and Preparation
Given below are the Ingredients and Preparation Method of Lentil Rice or Khichdi
Ingredients for Lentil Rice
- 1 cup rice
- ½ cup red lentils
- 1 onion, thinly sliced
- Chopped vegetables (carrot, green peas, potatoes)
- 1″ cinnamon sticks
- ¼ tsp cloves
- ¼ tsp cardamoms
- 1 tsp cumin seeds
- 1 bay leaf
- ½ tsp turmeric powder
- Chopped coriander leaves
- 2 chillies slit into half
- 4 cups of water
- 1 tbsp oil
- Salt to taste
- Ghee (optional)
- Chopped Tomatoes (optional)
Method of Preparation of Lentil Rice
Wash the rice and lentils thoroughly and keep aside. Heat oil in a Kadai and add cinnamon, cloves, cardamom and bay leaf. After a minute or so add cumin seeds and allow it to sizzle. Now add onion and fry till it turns brown. Add vegetables and chilies along with turmeric to it. Now add rice, lentils and salt by mixing evenly. After 2-3 minutes add water, lower the flame and cook. You may add more water while cooking if you want a running consistency. When the khichdi is ready add chopped coriander leaves to it and remove from flame. Serve hot with Papad and pickle in a bowl.
