Why not try this satisfying smoothie for a light lunch. The most colourful peppers provide the most bioflavonoids. Red peppers have more antioxidants than green peppers, but green peppers have more vitamin C than red peppers.
- quarter red pepper
- quarter green pepper
- quarter red onion
- quarter cucumber
- 1 clove of garlic
- few sprigs of parsley
- 1 tsp red wine vinigar
- 225ml/8floz/1 cup tomato juice
- 5 tbsp cold water
- dash tabasco sauce
- ground black pepper
- cucumber and parsley, to decorate
- Place all ingredients in the blender and blend until smooth.
- Serve chilled and decorate with slices of cucumber and a few parsley leaves.
