Gazpacho Smoothie

Why not try this satisfying smoothie for a light lunch. The most colourful peppers provide the most bioflavonoids. Red peppers have more antioxidants than green peppers, but green peppers have more vitamin C than red peppers.

Ingredients

  • quarter red pepper
  • quarter green pepper
  • quarter red onion
  • quarter cucumber
  • 1 clove of garlic
  • few sprigs of parsley
  • 1 tsp red wine vinigar
  • 225ml/8floz/1 cup tomato juice
  • 5 tbsp cold water
  • dash tabasco sauce
  • ground black pepper
  • cucumber and parsley, to decorate

Instructions

  1. Place all ingredients in the blender and blend until smooth.
  2. Serve chilled and decorate with slices of cucumber and a few parsley leaves.
