10 Minutes to the Table

We live in a fast paced world today and a quick lunch recipe is easy, plus also tasty. These two recipes take 10 minutes to put on the table and are appropriate for lunch or dinner. They are healthy recipes, as well as, being big on flavor. If desired, add a few pretzels or baked chips on the side to complete the meal

Of course, there is a huge variety of sandwiches to choose from, but this one has the added advantage of having fresh vegetables, i.e. cucumbers, red onions, and spinach. It adds a great nutritional value and the sandwich is nice and crunchy with a lot of flavor.

The spiciness of Dijon mustard also sets off the flavor of the ham and cheese. The addition of the crunchiness of the Ramen cabbage coleslaw salad is a nice addition to this type of sandwich.

Sandwich Ingredients

  • 1/4 cup butter, softened
  • 8 slices rye bread
  • 12 fresh spinach leaves
  • 4 thin slices red onion
  • 12 slices fully cooked ham
  • 2 tbsp. Dijon mustard
  • 8 slices cheddar cheese

Cheddar Cheese Slices

  1. Spread butter on one side of bread.
  2. On half of the slices, layer spinach, cucumber, onion, ham, mustard and cheese.
  3. Top with remaining bread.

10 Minute Whole Foods Lunch: Bean & Veggie Healthy Quesadillas

Shredded Cabbage


Crunchy Coleslaw


  • 1/3 cup vegetable oil
  • 1 package (3 ounces) beef¬∑ flavored ramen noodles
  • 1/2 teaspoon garlic salt
  • 1 package (16 ounces) shredded coleslaw mix
  • 1 package (5 ounces) sliced almonds


In a small pan, heat oil. Stir in contents of noodle seasoning packet and garlic salt.

Cook 3-4 minutes or until blended.

Meanwhile, crush noodles and put in bowl.

Add coleslaw mix and almonds

Drizzle with oil mixture and toss to coat.

Serve immediately.

Yield: 6-8 servings.


It is hard to beat these easy recipes with a short preparation time and an interesting taste. The variety of vegetables, along with the ham and cheese make a filling and satisfying and healthy meal. In the hot weather this type of meal is great because it is not too heavy. This quick recipe is something I love, as I don't always have time or the desire to cook those big complicated meals.

    Its very common for me to serve veggie sandwiches and often, at least once a day and many times twice, whole grain bread and veggies piled high is a great meal to be enjoyed anytime. :)

    I want to thank all of you as a group for your wonderful comments.

    My mother lives with me and became very ill shortly after I posted this hub. I ended up calling 911 and spending several hours at the hospital where she was admitted. She was stable when I left to come home to all these wonderful comments. Again, thank you all.

    I use sandwiches for dinner for when I'm in a hurry. Club sandwiches are my favorite but these recipes look well worth trying.

    Pamela, good hub, even though I'm not a sandwich fan. Anything that provides a simple method for a meal that can be fixed by a busy Mother at the end of a workday so all can sit down for a Prayer of thanks and family together is a great thing. One I think is in short supply these days from family life. I bumped the buttons up^ 50

    Hi Pamela--Important issue you've raised through your recipe. We do live in a rat race these days too much to do and too little time.But no matter how busy we may be I think it is important to have regualr family meals at the table.These recipes will defiantely help ease the stress of preparation... so now moms ,dads and kids can sit down at the table for a change:)

    Back when I was a student at WVU I found the best hot dog in the world. A little place called Town Hill Grocery in Morgantown had a hot dog with sauce and onions and dijon mustard and they put the cole slaw on the hot dog they were wonderful. You could buy three for a buck!!!!!!!!!!!
