MINT AND CUCUMBER REFRESHER

Mint and Cucumber refreshing drink

This lovely subtle drink, will leave you feeling refreshed, perfect to give you a boost in the hot days of summer.

SERVES 1

YOU WILL NEED

* A few sprigs of mint

* 1 tsp of caster sugar

* the juice of 1 lime

* 2cm/ 3/4 in piece cucumber, thinly sliced

* Chilled Sparkling water of your choice

* Some ice cubes

METHOD:

Chop a few mint leaves and mix with the sugar. Rub a little lime juice round the rim of a pretty glass and dip it in the minted sugar. Leave to dry. Next mix the rest of the lime juice, cucumber and mint- some chopped and some whole- in a jug and chill. Finally, to serve, pour the lime and cucumber into the prepared glass and top up to taste with chilled sparkling water and ice cubes

      Have never heard or thought of putting cucumber slices in a drink, but it does sound refreshing. I'll try this drink this week as we're having such a hot and humid summer.

      Thankyou. It has been quite the opposite here in England. We have had rain and floods all summer. So please send some of your hot summer our way :-)

      This looks really good. My chiropractor has this kind of drink in his office for his patients. I love it but I don’t think he has lime in it. We have lots of cucumbers in our garden this year. 90% humidy today so it's hot. Voted up and the drink is also so pretty.

      Thankyou very much. You will find different variations of the drink. I think it's just personal preference to add lime :-)
