MUMS CHEESECAKE SSHH DON'T TELL HER I TOLD YOU
Well if you are on a diet i wouldn't recommend doing this recipe. My guess is there are millions and millions....... and millions of calories in it. But for those of you who deserve a treat even those on a diet, go on treat yourself! Try this calorie galore cheesecake. Yum yum! The piece in the photo was my own piece i ate yesterday. Thanks mum for making it, it was delicious, i have to share it with you!
RECIPE IS FOR A FULL CHEESE CAKE
YOU WILL NEED:
* A whisk
FOR THE BASE:
*12 digestive biscuits
* 4 oz of butter
* Lemon curd
* Full tub of double cream ( the small 200 ml tubs)
* 3/4 of a tub of soft cream ( the 200g tubs ones)
* 1/2 the juice of a lemon
* Grated lemon rind
* A few berries of your choice to decorate the top (my piece in the photo has rasberry on it)
BASE METHOD:
Crush the digestive biscuits up ( tip: put them in a freezer bag and bash them with a rolling pin)
next melt the butter in a pan. Then add the crushed digestive mixture to the melted butter in the pan. Mix together then spoon the mixture into a cheesecake tin with a removeable bottom. Place the tin in the fridge till it has gon hard. After it has cooled in the fridge take it out and spread the lemon curd over the top of the base. Now for the topping
TOPPING METHOD:
Whisk together the double cream, 3/4 of a tub of soft cream and 1/2 the juice of a lemon in a jug or bowl. Then grate some lemon rind into the mixture. Spread the mixture over the biscuit base and place a few berries in the centre on the topping to decorate. Place the cheesecake in the fridge again to chill. Take out and take the bottom part out of the cheesecake tin an place on a plate ready to serve.
