The 1-Minute Chef (Creamy Mango Mousse)
Creamy Mango Mousse
Also called a "fool" which is an old-fashioned English dessert of puréed fruit folded into whipped cream. This heavenly mousse treat can help keep you cool on the hot "dog days" of summer.
- 4 to 5 ripe mangos, peeled and chopped (about 6 cups)
- 2 Tablespoons orange Juice
- Juice of 1 lime (about 2 Tablespoons)
- ²⁄3 cup ( 5-fluid ounce can) of evaporated milk
- Fresh mint sprigs (optional)
Place mango pulp, orange juice and lime juice in a blender; cover and blend until smooth. Tranfer to a bowl. Cover and refrigerate for at least 6 hours or until well-chilled.
Pour evaporated milk into a small mixer bowl; place beaters into the mixture. Freeze for about 30 minutes or until ice crystals form around the edge of the bowl. Next, beat evaporated on high for two to three minutes or until soft peaks form. Fold immediately into the chilled mango mixture. Spoon into stemmed glasses, and top with a mint sprig. Serve immediately
