Mashed Potato with Fetta and Spinach Recipe
4 medium sized Potatoes
100g Fetta Cheese (3.5 ounces)
½ cup of fresh Spinach leaves
½ cup Milk
Salt and Pepper to taste
Peel the potatoes and cut into quarters.
In a medium saucepan bring salted water to the boil. Add the potatoes to the boiling water and ensure the water just covers the potatoes. Boil for 10 minutes or until soft when poked with a skewer.
When cooked drain and return to the saucepan. Mash the potatoes and slowly add the milk to the mashed potatoes until you have the smooth consistency that you are after.
Now dice the fetta cheese finely and mix this into the mashed potato with a spoon. The heat of the mashed potatoes should melt the fetta cheese, although not completely through.
Finally mix through with chopped spinach leaves or whole baby spinach leaves.
Add salt and pepper to taste.
This recipe serves four (4) as a side dish.
